Muscovado Sugar - A Natural unrefined Sweetener

Muscovado sugar, also known as Barbados sugar, khandsari, or khand, is an unrefined cane sugar that retains its natural molasses. This gives it a dark brown color, moist texture, and a rich, toffee-like flavor with a slightly bitter aftertaste.

The sugar is produced by extracting cane juice, adding lime, cooking it to evaporate the liquid, and then cooling it to form sugar crystals. Unlike refined sugars, muscovado retains all of its molasses, though some varieties have a small amount removed to create a lighter version.

Nutritional Benefits

Muscovado sugar has the same calorie content as regular sugar—about 4 calories per gram—but contains trace minerals like magnesium, potassium, calcium, and iron. The molasses also provides antioxidants such as gallic acid and polyphenols, which may help protect against cell damage.

Uses in Cooking

Muscovado sugar enhances the flavor of baked goods like cookies, cakes, and candies. It is also used in savory dishes for its deep, caramel-like taste.

Health Considerations

Despite its minor nutritional benefits, muscovado is still sugar and should be consumed in moderation. Excessive sugar intake is linked to heart disease and diabetes. The American Heart Association recommends limiting added sugar to 25 grams per day for women and 37.5 grams for men. Some experts suggest that replacing refined sugar with natural options like muscovado may be a better choice for overall nutrition.
